Stuffed pepper skillet

These are easy stuffed peppers filled with seasoned ground beef and topped with melted cheese. They’re simple, filling, and a great weeknight dinner.

Ingredients (serves 4)

4 medium green bell peppers
1 pound ground beef (85/15)
1 cup shredded Mexican blend cheese
Taco seasoning, to taste
Salt and pepper, to taste

Instructions

Preheat your oven to 375°F.

Cut the tops off the bell peppers and remove the seeds and insides.

Bring a pot of water to a boil and add the peppers. Let them cook for 3 to 4 minutes to soften, then drain and set aside.

In a pan over medium heat, cook the ground beef until fully browned. Season with salt, pepper, and taco seasoning. Drain any excess grease.

Fill each pepper with the cooked beef and place them in a baking dish.

Top each pepper with shredded cheese.

Bake for about 25 minutes, until the cheese is melted and bubbly.

TIPS

Boiling the peppers first helps them soften so they’re not too firm after baking.

You can add rice or beans to the filling if you want to stretch it a bit more.

Store leftovers in the fridge and reheat when ready to eat.
