buffalo chicken dip
This is a creamy, cheesy dip with just the right amount of heat. It’s always a hit and comes together really easily, especially if you have cooked chicken ready.
Ingredients (serves about 6 to 8)
Chicken
1 lb chicken breast
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon chili powder
Dip
8 oz cream cheese, softened
½ cup ranch dressing
1 cup buffalo sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F.
Rub the chicken with olive oil and season with salt, pepper, garlic powder, paprika, and chili powder. Place on a baking dish and bake for 25 to 30 minutes, until fully cooked. Let it rest for a few minutes, then shred or finely chop.
Lower the oven temperature to 350°F.
In a large bowl, mix together the cream cheese, ranch dressing, and buffalo sauce until smooth.
Add in the shredded chicken, mozzarella, and cheddar cheese and mix until combined.
Lightly grease a baking dish or skillet and spread the mixture evenly.
Bake for 20 to 25 minutes, until hot and bubbly. Broil for 1 to 2 minutes at the end for a lightly golden top.
TIPS
You can use rotisserie chicken to save time.
Adjust the buffalo sauce depending on how spicy you like it.
Serve warm for the best texture.
