Lemon pepper chicken
With Cilantro Lime Rice
This is a simple, fresh meal with grilled lemon pepper chicken, fluffy cilantro lime rice, and broccoli on the side. It’s light, flavorful, and perfect for an easy lunch or dinner.
Ingredients (serves 2 to 3)
Chicken
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Juice of 1 lemon
1 tablespoon lemon pepper seasoning
Salt, optional
Lemon slices
Rice & Broccoli
1 cup cooked white rice
Juice of 1 lime
2 tablespoons chopped cilantro
1 to 2 teaspoons olive oil or butter
1½ cups broccoli florets
Salt and pepper, to taste
Instructions
In a bowl, combine the lemon juice, olive oil, lemon pepper seasoning, and a pinch of salt if using. Add the chicken and coat well. Let it marinate for at least 20 to 30 minutes.
Heat a grill pan or skillet over medium heat. Cook the chicken for about 6 to 7 minutes on each side, or until fully cooked through. Add a lemon slice on top while it cooks for extra flavor.
Cook the rice according to package directions. Once done, mix in the lime juice, chopped cilantro, and a little olive oil or butter. Season with salt if needed.
Steam or roast the broccoli until tender, then season with salt and pepper.
Slice the chicken and serve over the cilantro lime rice with broccoli on the side.
TIPS
Let the chicken rest for a few minutes before slicing so it stays juicy.
You can adjust the lime and lemon to your taste depending on how citrusy you like it.
