Cookie Monster
These are soft, loaded cookies packed with Oreos, Chips Ahoy, and chocolate chips in every bite. They have that bright blue Cookie Monster look and come out super soft in the center. Perfect if you want something fun but still really good.
Ingredients (makes about 10 to 12 cookies)
½ cup unsalted butter, softened
¼ cup brown sugar
½ cup granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla extract
A few drops of blue gel food coloring
1¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
¼ cup chopped Chips Ahoy cookies
¼ cup chopped Oreos
¼ cup semi-sweet chocolate chips
¼ cup white chocolate chips
Candy eyeballs
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy. Add in the egg, egg yolk, and vanilla and mix until combined.
Add a few drops of blue food coloring and mix until you get that Cookie Monster color.
In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add this into the wet ingredients and mix until a dough forms.
Fold in the chopped Oreos, Chips Ahoy, and both chocolate chips.
Scoop the dough into large tablespoons and place onto the baking sheet.
Bake for 9 to 11 minutes, until the edges are set but the centers still look soft.
While they’re still warm, gently press the candy eyeballs on top. Let them cool slightly before serving.
TIPS
Don’t overbake these. They’ll keep setting as they cool and stay soft in the center.
You can press extra cookie pieces on top right after baking if you want them to look a little more loaded.
